Potato bite

I boiled the potatoes, over low heat, and when they were ready I let them cool, then I cut the slices not very thick.

While the potatoes were boiling, I prepared the meat mixture. I hardened the vegetables, then added the minced meat. When it changed color I added paprika, delicacy, pepper and a pinch of salt, then I added the tomato juice. I let it boil for about 20 minutes.

I added the chopped basil, and left it to cook for another 15 minutes.

When the meat was almost ready, I put the chopped parsley, I added salt and pepper, and after a few boils, I turned off the heat.

In a yena bowl that I greased with a little oil, I put a row of potato slices, a row of meat composition, a row of potatoes, a row of meat, a row of potatoes, and again meat .

On top I put the yolk mixture with sour cream.

I put it in the oven, on low heat, for 30 minutes.

Fasting potato bite & # 8211 how to prepare

1. To cook this fasting potato bite, we need a deep tray, measuring 20x26cm. The moussaka will also come out in a larger tray, but it will not be as high. The tray can also be greased with flour or breadcrumbs. I preferred to line it with baking paper because I'm horrified by the possibility of some food (or cake) sticking to the tray. Turn on the oven and set at 190 ° C.

2. The filling for fasting moussaka is 100% vegetables. I only used carrots and onions, but others can be added. A handful of mushrooms, some eggplants or pumpkins pulled in the pan, etc. go very well.

Peel a squash, grate it and squeeze the juice. Chop the onion. In a saucepan, in which 3 tablespoons of oil have been heated, put the carrots with onion to harden. Add a good pinch of salt from the beginning and cook, stirring constantly, over low heat. Bake for 4-5 minutes, not forgetting to mix and watch that it does not burn.

3. Meanwhile, the peeled and washed potatoes are cut into thin slices (3-4 mm.). For fasting moussaka, I advise you to use flour potatoes, among those recommended for baking or puree. They cook much better in the oven and you won't be surprised to stay raw. Potatoes with firmer pulp can also be used, but they must be boiled for 6-7 minutes in boiled and salted water, to be half-cooked.

4. Season the potatoes with salt and pepper and spread a first layer of potatoes in the pan. The composition of hardened vegetables (to which others, such as mushrooms) can be added, is mixed homogeneously with the breadcrumbs. Add salt and pepper to taste, then spread half of the vegetables over the potato layer in the pan, pressing with the back of the spoon.

5. Cover the vegetables with a second layer of potatoes seasoned with salt and pepper. The second half of the hardened vegetables is pressed in an even layer over the potatoes. Cover with the last layer of potatoes, pressing on top of the entire surface.

6. Crush the garlic clove and fry for 1 minute in a tablespoon of olive oil. Add ½ tablespoon (12 grams) of flour, mix briefly then quench immediately with warm vegetable broth (200 ml.). Bring to a boil and pour over the prepared fly in the pan.

Baking and serving

7. Cover the tray with aluminum foil and place in the preheated oven at 190 degrees for 25-30 minutes, until, when trying to prick the potatoes with a fork, it easily pierces them. After this time, uncover the tray with the mashed potatoes and bake until nicely browned on top (10-15 minutes).

When ready, this fasting potato bite spreads a fragrance that appeals to the whole family. However, we have to let it cool down a bit. Serve warm moussaka with a salad, pickles, etc. I put some steamed broccoli and a tomato sauce next to the moussaka. With so few calories (149 / serving) we can add to the plate many vegetables cooked or steamed / grilled, sauces, salads, etc. It always seems to us an equally satisfying and delicious dish.

So a period with a lot of cooking is announced (and not because of the physical one, I haven't put any rimmel on my eyelashes for a week :))) and I hope to be able to post some of them, although I seem more tired now than when I went to work. The evening is a little long before Termi, who still has energy and falls asleep late.

This reinvented moussaka is not a classic recipe because I am desperate to put as many vegetables in the food as possible, so I put extra in this one as well. But it was good that Termi didn't really feel it and put it on hard, it's one of the only dishes other than pasta that I've been eating well lately. Since he got sick after the flu, he started making a lot of food and puts me to the test every day. She who was a soup fan and the pope was super good, now she's just looking for meat and that's it, she only eats mashed potatoes and many other chips and figures.

No good, I'm not talking about the fact that no one remembers reading novels these days :))). Okay, I just started last night & # 8220For who's ringing the bells & # 8221, but it doesn't compare :))).

Ingredient:

  • 2 onions
  • 2 cloves of garlic
  • 1 carrot
  • 1 red bell pepper (I had one baked in the freezer this summer)
  • 400g minced pork or beef mixture or just beef
  • 200ml tomato juice
  • A bay leaf
  • Salt and pepper to taste (salt only for children over 2 years)
  • Half a teaspoon of thyme
  • Half a teaspoon of basil
  • 2 tablespoons oil
  • 1-2 teaspoons of breadcrumbs to grease the pan
  • 1kg potatoes
  • 50g butter
  • 100ml milk
  • 100g grated cheese
  1. In 2 tablespoons of oil and a little water I hardened the onion and crushed garlic for about 5 minutes, until they softened.
  2. Then I put the grated carrot and the chopped pepper in cubes and I left everything for another 10 minutes.

  2. After I put the meat, I left everything for another 30 minutes until the meat was well done. Then I added the tomato sauce and left for another 10 minutes until everything thickened nicely.
  1. Then I started mounting. I greased the tray (or the trays in my case, because I realized that I have too much composition and the tray is too small) with butter and I sprinkled a little breadcrumbs. I then put half the amount of puree.
  1. I then poured the meat sauce and then the puree again. I stretched it nicely with a fork. The puree must be warm to make it easier to shape.
  1. I then put the grated cheese and ready, in the oven for 30 minutes or until nicely browned!

Fish bite with potatoes

1. Wash the potatoes and boil them in salted water. Leave for half an hour, then peel and cut into slices.

2. Wash the fish, cut it into pieces and sprinkle with lemon juice. Set aside for 10 minutes, then fry in oil for 5-6 minutes on each side. Separately, sauté the sliced ​​onion, finely chopped garlic and bell pepper, quench with a little wine and simmer for a few minutes. Season with salt and pepper.

3. Grease a pan with a little oil and place a layer of potatoes, then the onion hardened with bell pepper and 2-3 diced tomatoes. Sprinkle the peppercorns, place the fish pieces and put 2 sliced ​​tomatoes and the rest of the potatoes on top.

4. Pour the rest of the wine bent with water and bake in a hot oven, at the right heat, for 35-45 minutes. Shortly before it is ready, sprinkle with finely chopped greens.

Yes, I know, the correct version is mousaka. It's just that this is not a classic mousaka. It's the potato mousse my mother makes, and I'm melted for it - it's sensationally tasty. And in reality it's much easier to do than to tell about it :)

ingredients

  • 700-800 gr beef (I used veal leg)
  • 7-8 medium potatoes
  • 1 medium onion
  • 4 cloves of garlic
  • 1 cup broth
  • 300 gr sm & acircnt & acircnă
  • 150 gr cheese
  • 3 eggs
  • 2 tablespoons sunflower oil
  • 1 tablespoon dried thyme
  • 1 link green dill
  • salt pepper

As I said, I used veal leg (not beef)

I chopped it well, twice

I chopped the onion and crushed the garlic, then I hardened them in oil (I didn't fry them)

Then I put the minced meat

I mixed it and left it until it changed color, then I put a cup of water.

I let it boil, then let it boil for about 10 minutes. Then I set it aside and let it cool. C & acircnd cooled, I mixed it with 1 cup of broth (I had homemade, but you can mix 2-3 tablespoons of tomato paste with water), with a tablespoon of thyme, salt and pepper.

When the meat has cooled (the mixture must remain juicy), I cleaned the potatoes and cut them into 4-5 mm slices, then I beat the sm & acircnt & acircna with the 3 eggs.

And with finely chopped dill

Then it was simple. In an tray, I put a layer of meat sauce (about a third), over which I put a layer of potato slices.

Then I put a third of the meat mixture, a layer of sm & acircnt & acircnă (half), as well as half of the grated cheese.

Another layer of potatoes, the last third of the meat mixture, and a layer of potato slices, the second half of the mixture of cream and the rest of the grated cheese. I covered the tray with aluminum foil, put it in the oven & icircncins, over medium heat, for about an hour. Then I removed the foil to brown it.

I can't tell you how tasty it was. I'm glad I made this move. Good appetite :)

NOTE - If you are using a large tray, increase the amount of ingredients to reach you.

3. Peel the potatoes, cut them into slices and fry them in hot oil until golden. Remove and place on paper towels.

4. Towards the end of the sauce cooking period, when it remains only slightly moist, add the finely chopped parsley, turn off the heat and leave to cool for 15 minutes.

5. In a tray covered with baking paper put a layer of potato slices, then add a layer of minced meat. We repeat the process twice, the last row being potatoes.

6. In a bowl, mix the egg with the cream and grated cheese until it becomes a homogeneous composition. Pour over the moussaka so that the potatoes are perfectly covered.

7. Preheat the oven to 170 degrees and place the moussaka for 30-40 minutes.

Tip for making a delicious potato bite with chicken:

For a healthier version, we can replace the french fries with boiled potatoes in the shell and cut later.


Fasting recipes with potatoes

1. Spicy potatoes in the pan

This dish successfully replaces the classic french fries recipe and can be served with a large salad of vegetables.

Ingredient:

  • 1 kg of potatoes
  • oil
  • half a teaspoon of paprika
  • half a teaspoon of hot paprika
  • salt
  • pepper
  • rosemary

Wash the potatoes well and boil them in their skins. Let them boil for a few minutes, but always check them with a fork and turn off the heat when they start to soften. Remove the peel and cut the potatoes into cubes, then put the oil in a pan and fry the potatoes. Add salt, pepper, paprika and hot pepper one at a time and stir constantly. At the end, sprinkle a few sprigs of rosemary and leave the potatoes for another 2-3 minutes on the fire.

Ingredient:

  • 1 kg of potatoes
  • an onion
  • 200 g olives
  • 200 g pickles
  • 200 g pickled donuts
  • oil
  • salt
  • pepper

Boil the potatoes in their skins, and when they are ready, they are peeled and cut into cubes. Peel the onion and cut it into slices, as well as the cucumbers and donuts. In a bowl mix all the ingredients, put the olives, add the oil and salt and pepper to taste.

Ingredient:

  • half a kilo of potatoes

Ingredient:

  • 6 potatoes
  • 3 carrots
  • salt
  • pepper
  • dill
  • 3 cloves of garlic
  • a powder of flour
  • frying oil

Boil the potatoes and carrots and then pass until a paste is obtained. Then add the dill, crushed garlic, salt, pepper and a pinch of flour to bind the whole composition. Then shape the meatballs and fry in hot oil.


POTATO MUSCLE WITH FISH

I invite you today to cook together a delicious bite of potatoes with fish.

I recommend the code because it is a high quality fish with dense white meat, rich in protein and low in fat.

I used Atlantic code file from Edenia because it is a 100% natural product that does not contain phosphates, additives or other chemicals. It is a catch fish, without bones * and without skin and with a glaze of 10%.

1 kg of potatoes (weighed peeled)
a skinless Atlantic cod fillet bag from Eden
1 red bell pepper
1 large red onion
1 parsnip
4 tablespoons olive oil

200g sour cream

Peeled potatoes, steam them whole. We don't cook them very hard because they will crumble when we cut their slices.

Finely chop the vegetables in an electric grinder or grate them.
We put the stewed vegetables with a cup of water and the 4 tablespoons of oil. When the water drops, add another cup and let it drop again over low heat. When the vegetables have softened and the water has dropped, add the broth and spices and leave for another 2 minutes. Turn off the heat and add the chopped fish and mix.

Grease a yena or ceramic bowl with butter. I used a vessel with a size of 20x30cm. We begin to assemble the musacaua. Put a layer of potato slices, over them ½ from the vegetable sauce and fish, sprinkle 1/3 of the amount of cheese. Then another layer of potatoes, vegetable sauce and remaining fish, 1/3 of the cheese. We close the moussaka with another layer of potatoes. On top we distribute beaten eggs with sour cream and spices if we want then sprinkle the remaining cheese.

Put the dish in the oven in the bottom position, set 190 degrees C heat up and down without ventilation and leave for 40 minutes or until our moussaka browns nicely.

We peel the potatoes and cut them as thin as we can (I used a grater).

Chop the onion and garlic and fry them in oil for 2-3 minutes, then add the thyme, pepper, paprika, salt and 200 ml of tomato juice. Mix and add the meat and leave for another 6-7 minutes.
Grease a heat-resistant tray with oil and start laying the layers.

The first layer is of potatoes over which we put a pinch of salt, then meat, sprinkle with chopped parsley, another layer of potatoes, meat and potatoes again.
On top I put beaten eggs, the rest of the tomato juice, chopped parsley and 250 ml of water. I covered the bowl with a lid (or aluminum foil) and put in the oven for about an hour and 15 minutes over medium heat. In the last half of now I took the lid (foil) and let it brown nicely.
