Other cookies for Christmas. This time without an egg. It looks like snowballs, hence the name. They are tender and melt in your mouth.

  • 225 g butter, soft
  • 80 g + 50 g powdered sugar
  • 1 teaspoon vanilla
  • 300 g flour 000

Preparation time: less than 60 minutes

Snowball Cake (NO BAKING)

I promised yesterday, when I published the recipe for salmon and cream cheese balls, that I will write and publish as soon as possible the recipes I made for the holidays in the idea that maybe they are useful for you in the coming period. These are some recipes that can be made not only during the winter holidays except this one snowball cake whose recipe I will write below.

Okay, while it's still cold outside, I think it's going to be done anyway, even if the holidays are over. And, if we don't take into account the name I gave it, it works in the summer because it's a dessert WITHOUT baking, light, easy to make and very tasty.

This cake is designed both as a festive cake for New Year's Eve or other holidays during this period but also as a reason to recycle a cake / panettone that has not been eaten for Christmas. Okay, I specially bought this panettone to turn it into today's cake and I only used half of it.

You do not need a panettone with cream or one in large quantities. A simple one is enough, with or without dried fruit through it. Or, you can reuse slices of unused cake, left dry and unwanted by anyone. With some cream and a box of mascarpone you can turn these leftovers into an elegant and tasty dessert.

Bulgarian snow cookies recipe with coconut

Bulgarian snow cookies & # 8211 simple recipe with coconut.
These cookies are very tender and easy to prepare.

Mix the 8 yolks with 10 tablespoons of sugar and 8 tablespoons of hot water until it becomes foam. Separately beat the egg whites from the 8 eggs, foam with a pinch of salt. Carefully mix the beaten egg whites with the foamed egg yolks. In the 12 tablespoons of flour add 1/2 sachet of baking powder then gradually sift it over the above composition. stirring gently from bottom to top until flour is incorporated. Pour the composition in the tray lined with baking paper and put it in the preheated oven until it is baked (we test the toothpicks). After the biscuit top is baked, take it out and turn it over on a clean towel where we will let it cool completely, after which we will cut it in half.
Both from the top and from the bottom of the biscuit we will cut circles with a glass, so that they are equal in number.

In a saucepan put 6 tablespoons of flour, 200 g of sugar and gradually add the 500 ml of cold milk. Stir to make no frills and then boil the composition until it thickens. Remove from the heat and leave to cool, then add to it the 250 gr butter, 3 sachets of vanilla sugar and froth the composition until it becomes homogeneous.

From now on we have the circles cut out and the cream is ready. We take 2 circles each and grease one part with cream. We put the other part over the greased part and glue them.

This way we get the snowballs. We place them on a plate and on top we glaze them with melted household chocolate, taking care that it does not drip (for appearance).

Snow Bulgarian & ndash recipe

In the meantime we have grown up, but the child in us is still more and more interested in these Bulgarians. so let's compete this time & ndash who prepares the most delicious snowballs? Here's what you need and how to prepare:

100 g biscuits for tea

50 g mini-marshmallows (find here the recipe for homemade marshmallows)

50 g dehydrated cranberries

50 g bread crumbs (or even better, simple bread crumbs)

100 g grated coconut

Culinary glitter & ndash optional

Break the white chocolate into large pieces and on top of a pan in which the water boils, melt it in a heat-resistant bowl.

In a separate bowl, place the tea biscuits and candies and crumble them together. Then add the mini-marshmallows, cranberries and crumbled bread (or cake), mix a little. Add melted chocolate and honey. Mix them all well.

Pour the coconut on a plate. Taking with a spoonful of dough & ndash preferably ice cream, because it is spherical & ndash passes a & bdquobulgaras & rdquo through the coconut, at the same time forming it by hand in a shape as close as possible to a perfect sphere. At the end, you can spread Bulgarian silverware and culinary glitter, for an effect as similar as possible to fresh snow.

Lay all the Bulgarians on a tray with baking paper, let it cool for at least 30 minutes and then enjoy this delicacy!
