- Preheat a lightly oiled frying pan or griddle over medium-high heat.
- Combine flour, sugar, baking powder, bicarb of soda and salt. Make a well in the centre. In a separate bowl, beat together egg, milk and oil. Pour milk mixture into flour mixture. Beat until smooth.
- Pour or scoop the pancake batter onto the hot pan, using approximately 60ml (4 tablespoons) for each pancake. Brown on both sides and serve hot.

Turn the pancake out onto a plate and keep covered whilst making the rest of the pancakes. Adjust the hob temperature if necessary.

- 2 cups All-purpose Flour

- 1 whole Egg

Whisk the egg and the cooled melted butter. Add to the milk and lemon juice mixture. Gently mix the wet ingredients into the dry ingredients, just until combined. Do not over mix.
Cook pancakes as you normally would, using 1/4-cup scoops of batter.
