Prepare the dough as follows: put whole eggs in the bowl of the mixer, add a pinch of salt and start mixing first at low speed, then at higher speed, until the eggs have doubled in volume. Then add the white sugar and brown sugar and continue mixing until the composition becomes creamy (about 10 minutes). Now it's time to add the vegetable oil, which we pour into the wire, like mayonnaise, while mixing at medium speed. After we have finished integrating the oil, we add the vanilla extract, the chocolate drops, cinnamon, the apple cubes and half of the amount of flour in which we integrated the baking powder and mix again, this time at low speed. just to homogenize the composition. Add half of the yogurt mixture with milk, mix again, then add the rest of the flour. From this moment we start the homogenization using a wooden spoon or a silicone palette. Homogenize.

To fill the forms we can use the American measuring instruments, respectively the one of 1 TBLS (15ml), for the cup of mini muffins, or a teaspoon.

After filling the first tray, place a pecan in the center of each well.

Put the first tray in the preheated oven at 170º C for about 20 minutes. Check with the skewer if they are baked. After removing the first tray, insert the second one. Make sure that the second series bakes a little faster than the first, the oven is now hot. After removing the tray from the oven, remove the muffins and let them cool on a grill.

Only fill the wells 3/4 of the capacity, as the dough grows during baking.

If you want to get muffins with a finer (fluffy) consistency, replace the milk / yogurt mixture (half-half) with whipped cream in the same amount.
